It's not difficult to defeat her at all! I don't understand this mess with bosses. Everyone seems to find them hard, although it's very easy to defeat them. I took Jackson out on gold level in 7 moves

I completed ruby level of Mojave Desert and she only had 4,500 health while the Hill Brothers had 18,800 at ruby level. I don't know about other people, but 4,500 is much easier to take than 18,800. I'm only at level 510.
In case anyone has not figured it out the health for the bosses listed on this site are not necessarily the amount that you will face. I was tracking the Italy and Vegas bosses and for every level I moved up the boss's health would increase from anywhere to 60-100 health.

hey, i think zynga fixed Red Jackson. i just finished the Ruby Level! and yes, without even refilling my health! just need shivs, grenades and stun guns!

I am still stuck on the ruby mastery, can't seem to defeat her

Finished her. I used 10 stun guns, 5 shivs and 4 grenades. I've 268 health, 1,686 attack and 1,717 defense on skills with 97,712 mafia attack and 95,260 mafia defense. I used 2 stun guns on 1 henchmen and finished him with a grenade. Did the same with the other henchmen. Spent all remaining stun guns on Red then finished off with a grenade and 5 shivs. To my surprise, the shiv and grenade did great damage, the grenade did about a hundred plus so did the shivs (forgot the exact amount of damage they did.) I think I was hitting her 400 plus damage every attack (again I forgot the exact amount of damage I did.)
I didn't give her the chance to ice me since I ran out of stun guns and was afraid I couldn't touch her with her henchmen back from the dead.

My health is 300 and my defense is 1798, but Boss Jackson at Ruby Level iced me in one hit unless I used a stun gun.
As of 10/2/10, this boss has 4000 HP and two henchmen who regain full health if you get killed and have to go back in. However, Jackson only regains about 25% health. You may need to use a lot of Grenades and Shivs just to get past the henchmen.
I tried to fight her the first time with only a few items. When I made my first non-stunned attack and got immediately iced! I went back in and got her down to between 100 and 200 health (my attack skill is at 1642) before getting crushed again.
Then I spent almost 900 energy doing the 2-energy Associate job in New York until I had another 2 shivs and another 6 stun guns.
When I went back to the fight the third time, she was back up to about 750 or so HP and the henchmen were at full health. My 2 shivs and 6 stun guns were enough at that point.
Hopefully, that will give you some idea of what you would be up against.

Phew, they fixed her. Only took one try, 10 grenades, 10 shivs and 1 stun gun. Now she's too easy :)

That's sad when i defeated Red Jackson's her HP at ruby level was 4000, now i see that her HP at ruby level is 8000, double & no change with henchmens...Zynga this is absolutely not Fair..while early folks finished her off coolly without much of hindrance (We back then still struggled to beat her though)...but now increasing the HP & then also allowing her to regain 25% HP is just not the way to keep the game play on. Please come out with newer districts which will enthrall the users worldwide..

Use all of them then collect more. You can get them easily by doing small jobs, gifting and also collect from friends boss fight posts.

During the San Juan event you could give/receive them as gifts. If you leave then in your requests page you can "store" more than the 10 the game lets you have as loot.
-OR-
Run to New York and do Associate-level jobs because they (likely) require the least amount of energy to do have have the same likelihood of dropping consumables.
